Lasagna noodles and marinara sauce (obvi!)
Sliced Mushrooms, Onions, Spinach
Tofu 'Ricotta': Mash firm tofu, lemon juice, dried oregano, basil, and parsley
Creamy Cashew 'Cheddar': Blend soaked raw cashews, chili powder, garlic powder, and nutritional yeast
Shredded Vegan Mozzarella (my favorite brand is Violife)
Top with Italian Seasonings of Choice
Layer all ingredients in a lasagna dish as per usual. Bake in oven covered with aluminum foil at 450 degrees for 45 minutes, then bake about 20 more minutes uncovered until the top looks yummy and brown.
