Spring Rolls are so refreshing and just feel like summertime. The clean flavors and crunch of the fresh veggies, the refreshing mint combined with a little heat from the jalapeño, dipped into the sweet and savory peanut sauce - SO GOOD!! This is such a delicious way to load up on veggies and micronutrients while feeling completely satisfied.
Veggie Spring Rolls
Ingredients (organic whenever possible):
Fresh Veggies (Great Options Include: Cucumber, Red Pepper, Purple Cabbage, Jalapeño, Carrots, Mushrooms, Baked Sweet Potato, optional - add Tofu for extra protein)
Parsley, Green Onions and/or Chives
Mint (don't skip the mint...this makes it!)
Rice Paper
Ingredients for Homemade Peanut Sauce:
Garlic
Jalapeño
Parsley
Mint
Olive Oil
Peanut Butter
Soy Sauce
Rice Vinegar
Directions:
Bake the sweet potato and julienne the veggies. Soak the rice paper in cool water until pliable, but not too long. Place veggies on rice paper, and roll like a little burrito. Make the peanut sauce by blending all ingredients to taste.
